2015 Domaine Ratron Clos de Cordeliers Crémant De Loire Rosé

2015 Domaine Ratron Clos de Cordeliers Crémant De Loire Rosé

Tasting Notes:

Pale salmon in the glass, this sparkling rosé opens with aromas of stone fruit—apricot, peach, and cherry—before drifting into more exotic notes of mango and guava. The bubbles are fine and creamy, giving it that celebratory edge, while the palate balances citrus brightness with a tangy red-berry finish that shows off its Cabernet Franc roots.

Domaine Ratron:

Clos des Cordeliers sits in the heart of Saumur-Champigny, a walled 13-hectare estate that has been tied to wine for centuries (the first mention of vines here dates back to 1630). The Ratron family took over in 1932 and has carried the torch across four generations. Today, Marie-Françoise Ratron-Galet leads the estate, shaping its future while honoring its deep Cabernet Franc heritage.

Cabernet Franc:

Cabernet Franc is one of the Loire’s signature grapes—lighter-skinned and earlier ripening than its offspring, Cabernet Sauvignon, but full of character. Known for resilience in the vineyard and elegance in the glass, it’s both a blending backbone in Bordeaux and a star in its own right in the Loire. Here, it’s transformed into something playful and sparkling, a side of the grape you don’t often get to see.

Crémant Wines:

Crémant is the name for traditional method (aka champagne method) sparkling wines made in France but outside of the official Champagne region. This rosé is made entirely from estate-grown Cabernet Franc and follows the traditional méthode champenoise, with secondary fermentation happening right inside the bottle. But while most Crémants rest for around 9 months, this wine aged for a remarkable 72 months on the lees—adding depth, texture, and a whisper of complexity that makes it far more than your average sparkling pink.

Loire Valley:

Stretching over 600 miles of river and tributaries, the Loire is France’s third-largest wine region and a patchwork of microclimates. Known historically for its whites—Vouvray, Sancerre, Pouilly-Fumé—the Loire is also home to red and sparkling wines that are gaining more and more recognition. Saumur, in particular, has built a reputation for its Crémant, a style that offers Champagne’s elegance without the Champagne price tag.

Food & Wine Pairing:

Think of this as your “opening scene” wine. It’s perfect with cheese and charcuterie boards, where bubbles slice through fat and salt like a pro. It also plays beautifully with spice—dim sum, Thai takeout, even a round of sesame noodles. Basically: this is a bottle that says, let’s get this party started.

Mood Pairing:

This is the wine you open when you want to set a tone. Sparkling enough for celebration but grounded enough to sip on a weeknight. A bottle for fresh starts, unexpected joy, or nights where you need a reminder that life is meant to be toasted—whether you’re with a crowd or simply clinking glasses with yourself.
